I know that cupcakes are all the rage, I get it, they’re really good, but the muffin is the work horse of the quick bread. It last longer, can be frozen and can be whipped up in a second with whatever is hanging around begging to be baked.

Hey gang! Made some cookies with peanut butter, milk chocolate, white chocolate, and a little cinnamon. YUM! Get to it!
- 2 c all-purpose flour
- 1 t baking powder
- 1/2 t cinnamon
- 1/2 t salt
- 1+1/2 sticks butter, room temp
- 1/2 c peanut butter
- 1 c light brown sugar
- 1/2 c granulated sugar
- 2 eggs
- 2 t vanilla
- 1 c milk chocolate chips
- 1/2 c white chocolate chips
- Whisk together the flour, baking powder, salt, and cinnamon. Set aside.
- In a standing mixer with a paddle attachment, beat the butter and peanut butter together for 2 minutes.
- Add both of the sugars. Beat 2 minutes more.
- Add the eggs and vanilla until combined.
- In three segments, add the flour mixture.
- Fold in both chips.
- Bake at 350 for 10 minutes, rotating halfway through.

I’ve been working at the pastry station for the past couple of weeks. I’m in heaven. Been feeling really great at work. I need, need, NEED to bring my camera to work more. Hope you’re all doing wonderfully.

This is the silkiest, lightest dessert. Extra egg yolks ensure that the creme caramel is especially rich. The caramel can be a little tricky, but take heart, it doesn’t matter if it’s not perfect. I would make the caramel first and prepare the ramekins. This serves 8.
Chocolate cupcakes filled with homemade cranberry sauce, topped with hot buttered rum batter buttercream. Some of the best holiday flavors packed into one cupcake! The uber-sweet buttercream goes well with the tart cranberries. And the chocolate, well, it’s chocolate. It’s awesome with everything.
Once a week, Eric and I try to treat ourselves to a special dinner out. Sometimes, it’s more than once but in this economy you have to budget!!! Today we spent mostly unpacking and are not in the mood to get all prettied up for dinner so we are ordering in! We are brand new to the are and are trying to decide what to order… The host is close by and hails as toronto’s best butter chicken and tandoori chicken. Eric is Indian and a good indian dinner complete with naan, rice and something saucy and rich is our version of Yummmm! With the weather recently taking a serious drop in temperature we are in need of some dire comfort food… What’s your favorite comfort food??
